Clever Solutions to Keep Your Blades Safe and Sharp
As you may have noticed, we’re pretty crazy here at Foodal about a good quality kitchen knife.
In the past, we’ve posted on how important it is to choose a blade with quality steels to best suit your needs and cutting style.
We’ve emphasized how to care for them, with hand washing and not letting them sit in water. And about using the right kind of cutting board to keep cutting edges sharp.
But so far, we haven’t covered storage for your favorite kitchen knives.
Because just as surely as materials, maintenance, and cleaning are important to get the best cutting performance, so too is how they’re stored.
Certain storage practices will dull and damage fine edges, and can also be a bit dangerous to fingertips, while other methods will help to keep those edges keen and crisp.
To that end, in this post we cover kitchen knife storage methods.

Storage Styles
There are essentially four basic ways to store your kitchen knives. You can mount them on a wall with a magnetic strip, or store them on the counter in a block or dock, under a cabinet if space is really tight, or in a drawer dock.
There’s also a fifth method, and that’s the chef’s roll. But this is more for the professional chef who travels with his tools, and is somewhat cumbersome for home use.
Wall Strips
Magnetic wall strips are a safe and convenient way to store your cutting tools. This is arguably the best method to hold kitchen knives, as minimal contact is made with the cutting edge, which keeps them sharp and damage free.
It’s also a beautiful way to display your knives. And a strip is also efficient, as it allows you see all of your blade options in a single glance – no more pulling every knife from the block until you find the one you want.
Walnut 16″ Magnetic Knife Strip from Woodson
A magnetic wall strip can be mounted on the wall above the counter, on a backsplash, on a cupboard end, or on the side of the fridge.
And they come in a variety of materials, like stainless steel, quartz, and wood. Some are also available with a utensil bar and hooks to combine storage options.
Here are a few considerations for choosing magnetic wall strips:
The magnet needs to be strong enough to hold the blades in place without slipping, but not so strong that they snatch the blade as it gets close. If it’s too strong, the magnet can cause the blade to slap against the bar, with a slim chance the cutting edge might chip.
A good habit to develop is that of touching the spine to the bar first, to avoid potential damage to the edge from a hard slap.
Length is another important factor, as most can’t be cut to shorten. With varying lengths available, be sure to choose one that will fit the space you have available, and hold the number of tools you plan to mount.
What to Buy
Woodsom
Protect your knives from chips and damage and help maintain a sharp, keen edge with this beautiful wooden magnetic bar holder from Woodsom.
Crafted of all-natural walnut or bird’s eye maple, it has a lustrous finish that’s hand-rubbed with FDA approved butcher block oil, which is both nontoxic and food safe.
Woodsom 16″ Magnetic Knife Strip in Walnut

And you’ll be able to hold a good selection of knives and shears on this generous surface, which measures 16 inches in length.
The bar is easily face-mounted for a solid, secure holder that won’t jiggle loose, and the mounting holes are attractively capped with walnut or maple wood plugs.
Professionally crafted, the mounting holes are drilled clean, straight, and evenly spaced, corners are square and precision cut, the stain is evenly applied, and the wooden caps tap in snugly – and all of this careful attention to finishing details makes for a classy appearance.
Woodsom 16″ Magnetic Knife Strip in Bird’s Eye Maple
A space-saving solution for kitchen storage, the Woodsom bar comes with mounting screws, self-drilling drywall anchors, and wooden plugs.
Woodsom recommends the occasional light coating with butcher block oil to keep the wood resilient and to prevent damage.
This option measures approximately 17 x 2 x 1 inches, and weights a bit under 1 pound. Made in the US, it comes with a 30-day return policy through Amazon.

Easy installation also gets several favorable comments. The included hardware and face-mounting gives a confident feel, as it holds the bar securely to drywall or a backsplash and prevents any wobble.
The magnetic field is strong as well, with magnets on both sides of the screw holes, so you get full use of the face from end to end.
An attractive way to store and display your knives, the wood surface proves to be kind to cutting edges, and there’s no scratching on the profile either.

Countertop Docks And Blocks
Knife blocks and docks that sit on the counter conveniently keep your blades close to your work station for quick and easy access.
There are the old classic blocks that come as a set with knives included, which many are perfectly happy with. Others come without knives.
Cutlery and More 25-slot Beechwood Universal Knife Block
Many are made of wood for a handsome presentation – but one of the main drawbacks here is cleaning.
Getting into the slots can be very difficult, and they offer a welcoming environment for dust, debris, mold, and germs.
Plus, if they’re made of wood, putting them through the dishwasher can ruin them.
Another problem with blocks is that they can be rough on cutting edges.
Sliding them in and out of the slots usually means contact with the wood, which tends to dull the edges quickly – and this means more frequent honing and sharpening.
If you do use a block with pre-sized slots, storing your blades on their spines will help to keep edges sharp.
And how you remove knives from a block will have an impact on sharpness as well. When removing, press the spine gently against the wood to keep the cutting edge from making contact.
And finally, if you’re building your own collection of mixed knives, blocks with pre-sized slots can be limiting and frustrating, as blades of a different brand often won’t fit properly.
A better option for countertop storage is to choose a universal slotless block.
These blocks are filled with rubber or plastic rods that are attached to a base plate, and will accommodate any size blade – provided it will fit within the overall dimensions.
Kapoosh Dice Knife Block available on Amazon
Another handy feature of universal blocks is that the rods, which are attached to the base pad, can be removed as one piece and put in the dishwasher to be cleaned and sanitized.
The block itself can then be washed by hand or in the dishwasher, depending on the materials used in construction.
However, if you have a lot of very sharp Japanese blades, they can do some serious damage to the flex rods.
Again, you never want to put a wooden block through the dishwasher as the heat and water can dissolve the wood glue, ruin the finish, and crack the wood.
Design is another consideration with blocks, as some will require a straight vertical lift while others will release blades on a diagonal plane.
Diagonal options are better for storage under cabinets, as a straight vertical lift requires considerably more clearance to free the knife from the block.
A countertop dock is usually made of a block of wood with a clear sheet of plexiglass attached to the face. Blades then slip into the space between the two, which may or may not have pre-determined slot sizes.
This is a nice option for displaying your blades, but again, clearance under cabinets may be an issue if a vertical lift is required.
There’s also a third countertop option, the magnetized block. Working on the same principles as a magnetic strip, a magnetized block of wood (or several tiers of wood) sits on the countertop and the blades sit flat on the surface face.
Artelegno Magnetic Knife Block Solid Beech Wood
Magnetized blocks help to keep blades sharp, and the universal models do a fairly good job of this as well.
What to Buy

The Boker magnetic block gets high marks for its well-made construction, strong magnetic field, and attractive display.

Made in your choice of beech wood or a cherry finish, this block is big and brawny. Featuring a total of 35 slots, it will accommodate a honing steel, kitchen shears, a straight fork, and a variety of knife sizes.
Wusthof 35-Slot Grand Beech Knife Block, available on Amazon
It can handle long, 12.5-inch blades in the top row, mid-sized blades in the middle section, and the lower portion of the main block will fit a vegetable cleaver as well as utility and paring blades. Plus, the bottom portion has slots for a full set of eight steak or dinner knives.
The widest slot measures 3.5 inches, plus two at 2.5 inches, nine measuring 2 inches, three at 1.5 inches, and the remainder of varying sizes for smaller blades. All slots measure 0.25 inches in height.
And your blades will stay nice and sharp as they rest on their sides, not the cutting edge.
Four rubber feet keep the block steady on the counter and safely in place, and the Wusthof logo is branded into the base.
It measures approximately 13 x 7.75 x 10.5 inches, and weighs 11 pounds. Made in China, Wusthof does not guarantee their wood products.
What Others Are Saying
The following notes are compiled from the most frequent remarks of verified shoppers at Amazon.com.
The Wusthof Grand receives top grades for its large capacity, sturdy construction, and smart design for long blades.
Reviewers report that the Wusthof block is a great option for a multitude of blades, and that it will easily accommodate the longer blades of carvers and bread slicers.
Big and sturdy, the block sits steady on the counter, and all pieces are well-glued for a robust feel.
Wusthof 35-Slot Cherry Storage Block, available on Amazon
Thoughtful design is another highlight, with slots for long blades at the top, and space for a wide vegetable cleaver in the middle. It will hold pretty much any size – with the exception of a large meat cleaver – thanks to the variety of slot widths.
On the complaints side, there are two main concerns.
The first regards the cherry block, with a handful of folks stating the color isn’t cherry, but closer to maple. And the veneer on the cherry block doesn’t seem to be the best quality, with chipping and peeling getting several mentions.
While a large majority of reviews are positive, the other common complaint regards quality control. Several reviewers have mentioned cracks in the wood, excessive glue at the seams, and flaky varnish.
Summary
The Wusthof Grand is a big block that will hold a large selection of blades.
Robust and solid, it will fit blades as long as 12.5 inches, a full set of steak knives, and just about everything in between – including a fork, honing steel, and kitchen shears.
However, you should also know that it will occupy almost one square foot of counter space.
This model is ideal for those who already have – or plan to build – a large collection of cutting tools, and who like to keep everything in one handy spot.

There are also plenty of favorable comments about the generally good construction, and remarks that for a tall, narrow block it stays well-balanced.
Complaints are few, but there are a couple of common themes.
The first is that smaller knives don’t sit true, and they tend to tilt or lean when placed in the holder.
The second regards the components being somewhat lightweight.
A few owners have reported that larger blades have pulled the accordion holder out of the block, some say it’s awkward to remove knives, and a couple more report that it tips over too easily.

Under Cabinet Storage
Under cabinet storage comes in two styles.
The first is basically a block attached to a swivel, which is mounted on the underside of the cabinet. When you need a blade, the entire block spins to access the handles, and then can be moved back and out of the way once you have your selection.
The second style is a hinged dock that contains knives in a drawer-like enclosure. These open by pulling down to reveal the contained tools, and then close to sit tightly under a cabinet for storage.
Like magnetic strips, these models are great for freeing up space on the counter and in drawers.
What to Buy
Wusthof
From Wusthof, we have this clever under-cabinet knife block – ideal for small kitchens when countertop, drawer, and wall space is at a premium. Made of solid beech wood, it will fit underneath any standard kitchen cabinet.
The block itself is a rotating platform that is attached to a lazy susan bearing, which is then attached to a wooden base or spacer.
Wusthof 8001 Under-Cabinet-Swinger Knife Storage Block
The base is fixed in place via three screws mounted into the cabinet floor, which allows the block to rotate a full 360 degrees. When loaded, turning will be restricted from about 10 o’clock to 2 o’clock, due to handle clearance. In other words, depending on exactly where the block is mounted, the handles might bump against a back wall.
The spacer ensures that handles sit comfortable below the cabinet, with adequate clearance to grasp and move them.
And just a light touch is required to move the block into position to access handles, then return it to a storage position with the handles tucked neatly out of the way.
The pivoting block stores eight knives of varying sizes and a honing steel. There’s also a recessed magnet on the inside of each slot at the bottom, close to the openings, to ensure that blades stay in place when the block rotates.
The slots travel through from end to end, which makes for easier cleaning. This also means that you can reverse the direction in which the handles point.
For example, you could have the slot for the honing steel on the left side of the block, or by turning the block 180 degrees before mounting, the same slot would be on the right side.
The Wusthof pivoting knife block measure approximately 10.25 x 7.25 x 3.5 inches, and weighs close to 4.5 pounds.
Screws, mounting hardware, a template, and mounting instructions are included. Made in China. Wusthof does not guarantee any of their wood products.
What Others Are Saying
The following comments are taken from the remarks of verified purchasers at Amazon.com.
The Wusthof pivoting block receives high marks for its innovative design, space saving abilities, and smooth efficiency.
Fans of the Wusthof block appreciate the clever design that frees up both countertop and drawer space, particularly effective for storage in small kitchens. The block is easily accessible when your cutting tools are needed, and conveniently out of the way when not in use.
A number of reviewers also report that the quality of the block is nice, with a smooth finish and rounded edges, and that it makes an attractive accessory for the kitchen.
The lazy susan bearing assembly operates smoothly, pivoting from side to side with just a gentle push – but it also has enough drag to prevent the block from careening wildly.
The concealed magnets in each slot are another added touch that reviews appreciate, as they keep blades securely enclosed even when rotating.
Installation is a bit contentious. Many reviewers report that hanging the block is easy, with good instructions and a clear template to measure and hang with little effort.
However, there’s also a significant number of users who claim just the opposite, arguing that installation is difficult and that the template doesn’t match the pre-marked holes on the base.
Another common theme for negative reviews regards the quality and construction of the wood. Some units arrived with the wood split in various spots, and others report that the wood split while mounting.
Finally, a small number of folks report that an 8-inch chef’s knife – even one of Wusthof’s own – won’t fit into the largest slot, which measures 1 7/8 inches.
Summary
The Wusthof Pivoting Under-counter Block is a brilliant idea for space-saving knife storage in a small kitchen.
The pivoting action makes it easy to access blades when you need them, and is equally easy to move out of the way when finished with your knives – all without taking up space on the counter, wall, or in a drawer.
Unfortunately, there seem to be a couple of quality control issues that need to be worked out.
Ensuring that the template matches the base would help those who aren’t adept at mounting techniques, or figuring out spatial ratios.
And better construction techniques to prevent the wood from splitting would also bolster customer satisfaction.

Drawer Options
Drawer storage is another possible method for knives – provided you don’t just let them bang around loosely.
Unsheathed blades in a cutlery drawer are risky for the safety of your fingers, and clunking against each other as the drawer moves pretty much guarantees dull blades and damage to edges.
SafeHouseware In-Drawer Bamboo Knife Block Drawer Organizer
A drawer dock will secure knives in place, a decent alternative if you have limited countertop or wall space.
Models come in single or double tiers. Like blocks, some include specifically sized slots for particular blades, while others are more universal.
For the greatest versatility, look for in-drawer holders with slots that can fit a range of sizes.
The interior measurements of the intended drawer are an important consideration for in-drawer holders or docks..
You want to ensure you’ll have adequate clearance when knives are mounted, as oversized handles can prevent the drawer from closing.
Another issue with in-drawer units is that blades sit on the cutting edge, which can quickly dull them. Consider storing them on their spines instead.
Cleaning can be a problem with drawer docks as well. Blade slots can be tight, and collect debris quickly. And if the dock is made of wood, it can’t be soaked in water or put through the dishwasher.

What Others Are Saying
The following comments are taken from the most frequent remarks of verified purchasers at Amazon.com.
The Bellemain In-drawer Knife Block receives top marks for its solid construction, smartly organized design, and finishing details.
Reviewers report that the Bellemain is solid and sturdy. The five wooden dowels and the dividers that form the block make a well-crafted package that’s sufficiently heavy to stay in place in the drawer – and there’s no shifting or sliding when the drawer is opened or closed.
Finishing details are of good quality as well, without imperfections. The surface is smooth, edges are nicely rounded, and there are no splinters lurking in the slots.
Handles sit snugly on the elevated edge, and blades are safely enclosed in the block with no exposed cutting edges. And the first tier, for large cutting tools, provides ample space for fingertips to reach under the handles for a secure purchase when removing.
A tidy way to keep cutting utensils organized, it’s a good child-friendly option as sharp, shiny blades are safely tucked out of sight.
Although it’s advertised as having 16 slots, a number of reviewers report that it actually only holds 11 knives. The front tier will hold 5 knives with slots that travel all the way to the rear to accommodate long blades, and the middle tier will hold 6 handles with shorter blades.
There aren’t many complaints, but a few folks have reported that the handle fit is quite snug, so it’s difficult for fingers to get underneath to grasp the handles – they need to be lifted by the butt of the handle, which is reportedly easy enough to do.
There are also a few remarks that it won’t accommodate blades longer than 8 inches, as those with a large bolster tend to jam on the middle design wave, causing some handles to protrude over the front edge a bit.
Summary
The Bellemain In-drawer Knife Block is one of the top choices with online shoppers who prefer a drawer organization system for their collections.
It proves to be a sturdy and reliable option for in-drawer organization of steak and paring knives, utility blades, long slicers, and serrated bread slicers.
But it isn’t the best option for blades with a tall profile (i.e. 2 inches or greater in height), or those with a large bolster.
Nonetheless, if the design suits your needs, the Bellemain In-drawer Block provides great value for a relatively low cost.

This is a super helpful article – thank you for all the research! I’m looking to replace my butcher block with attached knife holder and have been trying to determine the best place to store our knives. Great tips here!
Great article although would be helpful if you could make a recommendation specifically for large knives. I have a Kramer Damascus serrated blade that is nearly 11″ in length and am struggling to find anything to hold it it except a magnetic bar, which doesn’t have a reasonable mounting position on our granite island. Suggestions?
Have you considered drawer storage with a knife guard in place to protect the blade? For larger knives like this one, this is probably going to be your best bet. Even though it’s nice to have all of your knives at the ready and on display in a block on the counter, I’ve found that I actually prefer having the option to keep the ones that I don’t use as frequently safely stored in a drawer instead. Guards and protective sheaths are available in a range of standard sizes, and something like this one that’s available on Amazon should work for a 10- or 11-inch serrated blade.
Fabulous website, very informative for a man who likes cooking and has sharp knives to store. Thank you.
