All About Chef’s Knives

A clumsy, dull knife makes your kitchen efforts clumsy and dull. And that is definitely not the best motivation to spend more time crafting healthy meals at home.

If you’d like to amp up your cooking skills, with more enjoyment making meals, having a few good knives on hand is essential.

You only need a few to start with, and they don’t necessarily have to be the most expensive either.

The best you can buy for your purposes is more important than their price tag.

Of course, you’ll need to know what makes a ‘good’ knife ‘good’ in order to purchase the best for your budget…

A chef’s knife, or cook’s knife, is a large bladed tool used in a variety of food preparation techniques.

Originally designed for disjointing large cuts, the long, tall blade was needed to handle the torque required to slice through tough cartilage and connective tissue.

Today, thanks to its unique design, it’s become very popular as more of a general purpose knife and serves a variety of functions.

A chef’s knife is the home cook’s equivalent of a Swiss Army knife – it’s ready and willing to perform any task given it.

In general, it will have a blade length of 8” and a height of 1.5 – 2”, although many models will range in length from about 6 – 14” and can measure up to 3” in depth.

The actual shape of the blade is determined by the style it’s meant to emulate. If you’ll visualize a straight line from the base of the heel to the point of the tip, the area below this imaginary line is where the main difference lies.

A French-style blade will have a straighter edge extending from the heel, before curving up to the tip of the blade – it has a truer triangular shape.

A German-style blade has a deeper, more continuous curve beginning at the heel and traveling all the way to the tip, which gives it more of a rocking motion – the area below the line has a wider angle, or a big belly.

A Japanese-style chef’s knife has a profile similar to either the French or German style, and comes in a variety of shapes for particular tasks. And, it will usually be thinner in the cross-section and lighter than its European counterparts, and is typically constructed of an exotic stainless steel alloy.

Japanese blades are well-known for the hardness of the alloys used, and their extreme sharpness. A typical Japanese-style knife is ground to a 15 – 18° angle, while a Western style blade will have a less severe angle of approximately 20 – 22°.

None of these styles is inherently better than the other, and it really comes down to being a matter of personal preference.

Features to Look For in a Chef’s Knife

To find the knife that’s just right for you and your kitchen, give the following points some thought before making a purchase.

Just as there are many shapes and sizes, there’s also considerable variation in weight. A heavier knife might cut through dense food easier due to its weight, while a lighter one may offer greater maneuverability and versatility. It’s really a matter of personal preference for the typical tasks you’ll be using it for.


Balance is another somewhat ambiguous feature. Too much weight on either the blade or handle will make you work harder than a well-balanced tool, and side-to-side stability is important as well. The best way to determine balance is to hold a knife lightly in the palm of your hand to see whether it teeters to one side or the other, and if it feels natural when gripped.


The 8” chef’s knife is very popular for home cooks because of its versatility. A smaller 6” size is wonderfully agile and great for detail work, but may not be robust enough for cutting through large pieces.

And a large 10” size will handle more volume with ease, but can feel awkward and a bit overwhelming.

The Edge

A well-made chef’s knife should be sharp right out of the box. How well it will hold its sharpness, and ease of sharpening, is primarily determined by the materials used in construction.

The Spine

The spine is the top edge of the blade, thicker at the heel and tapering to the point of the tip.

Typically it will have square edges which may cause some discomfort if you like to grip your knife with the forefinger over the bolster and spine – if you find it to be uncomfortable, a little buffing with emery paper will round it out easily.

The Heel

The heel is the thickest and broadest section of the blade and is located at the base just before the handle.

This area holds the greatest heft and provides the necessary force for cutting through tough tissue or large items.

Look for a sturdy heel that offers strength and stability when it contacts the cutting board.

The Bolster

This is the thick connective piece located between the heel of the blade and the handle. It’s used to add strength, stability and balance and also acts to protect your fingers. Some knives will have no bolster at all, some will have a half-bolster that makes sharpening the entire length of the blade easy to do, and others will have a full bolster from spine to edge.

The Handle

Handles come in a variety of materials, shapes and sizes, so look for one that gives a feeling of comfort and security – and gives plenty of underside clearance to ensure you don’t bash your knuckles when chopping.

A Note on Sharpening and Maintenance

It can’t be said enough, your tool is only as good as the maintenance it receives. A $2000 custom made blade or a $150 decent quality knife will not cut any better than a $2 Walmart special if it is not kept sharp.

One of the key differences between a $2 example and a good quality product is that a better made blade will retain the edge for a lot longer and be much easier to sharpen.

Despite all of the discussions within various groups and message boards on the net, the special alloy, high chromium, high carbon hoopla doesn’t turn these tools into magic wands. They still need sharpened.

  1. I think a good chef knife makes all the difference. I had a poor quality one for a while and I found I was always slipping when I cut food. Recently I invested in a good quality name brand blade and trust me it makes all the difference. I use it for everything. I haven’t once yet slipped when I was cutting and I find I am able to slice thinner then I used to.

    • I somewhat agree with @kimmymarkks. A good cook makes all the difference. Consider a situation where a person is provided with all the valuable stylish tools to use in food preparation then he fails to make a tasty meal. My mum uses the old traditional tools in cooking but still emerges the best in the neighborhood (IMHO).

    • So true Kimmy, once you find a good knife you want to hold on to it because it makes prepping and cooking so much more enjoyable. And safer!

  5. Wow, this is the only guide I’ll ever need. I’ve always been a huge fan of those reality TV shows on the cooking channel, like Cutthroat Kitchen, and I never knew why they used such wide knives until I read this. Such great info! It’s making me want to run out and buy a new chef’s knife right now. Our kitchen set that I thought were decent quality (they were my husbands that he had prior to our marriage) began to rust after soaking them in a sink full of soapy water, so we are down to only one. I never heard the tip of putting oil on a blade to prevent it from rusting, so I’ll have to try it when we buy a new set and see how well it keeps the rust at bay. That and stop soaking them in water, I guess! Thanks for the extensive guide!

  7. I used to be a production lead in a facility that processed and prepared fruits and vegetables into almost anything you see on a deli shelf or in a restaurant. We also processed romaine to be used in salads etc.. We did the prep work before it went through the machine that cut it and the equipment to wash and dry it with a Chef Knife. Everything else in the plant that wasn’t handled by machine or need to be prepped first was cut using a chef knife. We didn’t use pairing knives on anything. The only other sharp hand tool we used was a peeler. Even when it came to cutting the ends/stems off of a large amount of brussel sprouts we used a chef knife. The chef knife is a very efficient and versatile tool if you know how to use it properly.

  8. I think the Zwilling J.A. Henckels Twin Pro S is one of the best chef knives! I owned one for 2 years and it is an amazing knife! The cutting edge lasts very long and it is not such a pretentious knife to maintain.

  9. If you’re new to cooking I definitely think a more hefty chef’s knife is the way to go, because the heavier weight makes it easier to learn how to let the weight of the knife do the cutting. Plus a heavier knife just feels nice in the hand (in my opinion).

  10. I’m really surprised not to see Dalstrong on here. They really are on the “cutting edge.” I got their Shogun chef’s knife and the Quantum nakiri and really like them a lot.

    What are your thoughts on the Zwilling 1731 chef knife? It has a high price compared to others but it is made of Cronidur 30 steel heat treated to 60 HRC. Combine that with a well-regarded manufacturer, a shape very similar to others on your list, and an ebony handle, and it seems like a reasonable price to me. This steel is also known as LC200N and Z-FiNit.

    I’m a bit unclear as to why this knife doesn’t get more praise. There are very few kitchen knives made of this high-end material.

  13. As an enthusiastic home cook and someone who has worked professionally in kitchens, I have an excellent selection of knives, each with a specific purpose. However, my chefs knife is the one I use the most as it is so multi-functional.
