Operational Settings

The Geryon uses two modes for packaging foods. ‘Vac Seal’ is used to automatically process goods by exhausting air and closing the bag when the proper amount of vacuum has been reached.

The ‘Seal’ function can be used to stop the suction process at any time and close the bag, or just to create a heat-lock on bags without removing any air.

It also employs two Food settings to ensure the best possible storage method for a variety of foods. For items with a naturally high water content, or those enriched with added liquids like braised meats, sauces, or stews, choose the ‘Moist’ setting – it gently removes air with a minimum of liquid displacement. Foods that are naturally lower in moisture can be processed quicker using the ‘Dry’ setting.

The ‘Mode’ button is used to determine vacuum levels. ‘Normal’ is used for dense foods that will retain their shape during depressurization such as animal proteins, deli items, and dry goods. And ‘Gentle’ is used to package fragile items that would become deformed or crushed under normal suction, like cookies, tender herbs, or soft, ripe fruit.

The ‘Stop’ button can be used as needed to halt processing at any time.

Components and Specs

The control panel is laid out on the lid for easy access and features soft-touch digital buttons for fast and simple operation. And each button illuminates with a cool LED light to indicate which operation mode is currently in use.

The body is made of a strong, resilient engineered ABS thermoplastic and features a brushed stainless steel lid that adds an elegant visual touch. Both the interior and exterior are easy to clean with just a soft, damp cloth.

To operate, the bag edge is placed along the heat bar and pressed until it locks in place. Once processing is finished, the lid is unlocked with two release buttons at each end of the body.

To depressurize and close canisters, jars, and wine stoppers, the included suction hose will fit all standard-sized exhaust ports – just attach it between the external canister and internal accessory nib to process.

The Geryon 5700 measures approximately 14.25 x 6 x 3.5 inches, weighs just over 3 pounds, and can accommodate bags up to 12 inches wide. It comes with a one-year warranty to be free of defects in materials and workmanship.

Geryon recommends storing the unit with the lid unlocked to extend the gasket life.

Summary

This isn't a bad little machine. The lower ratings are indicative of little, inexpensive appliance designed to be "good enough" for most people. At under $50 (at the time of this writing), it's not designed to compete against the superb Weston Pro-2300 at 7x the price or a chamber vac unit like the VacMaster 210 at 15x the price.
