I am always looking for quick and easy sandwich ideas for lunch at home or on the go. As I’ve previously mentioned, my oldest daughter is a vegetarian, so I like to cater to her preferences when planning our meals.
We can usually substitute tofu for meat on her plate when preparing lunch or dinner, but I always like it when I can find a meal that everyone likes and can eat.
All of my kids are crazy for hummus. They eat it on just about everything, from crackers to homemade pita to vegetable crudités. Hummus makes a great spread on wraps and toast. Add a few veggies and you have a delicious and filling sandwich.
